Looking for a cozy, winter dinner that’s easy to make and full of flavour? Creamy white beans with greens and garlic are the perfect one-pan dish for busy weeknights or casual weekend meals.

Packed with protein-rich beans, leafy greens, and aromatic herbs, it’s comforting, nourishing, and ready in about 30 minutes!

Ingredients
1/4 cup olive oil
1 small yellow onion, diced
2 tsp fresh rosemary, minced
1/4 tsp chilli flakes
5 garlic cloves, minced
350g fresh kale or spinach, stems removed & roughly chopped
2x 420g cans cannellini, butter or white beans, rinsed
500 ml vegetable or chicken stock
1 tbsp lemon juice
Salt & pepper
4 tbsp grated Parmesan or Pecorino, plus more to serve

Method

  1. Using a cast iron pot or heavy-based pan (fry, sauce - any is good), heat the olive oil on medium heat.
  2. Once warmed, add the onion and rosemary. Cook, stirring occasionally, for 6 minutes, or until softened. Add the garlic and chilli flakes and cook for 1 minute, or until fragrant.
  3. Stir in the greens by the handful, letting them wilt before adding more.
  4. Add the beans, stock, and a pinch of black pepper. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 6–8 minutes. Mash some beans with the back of a wooden spoon to help thicken the broth.
  6. Remove from heat. Stir in lemon juice and Parmesan. Add salt and more pepper to taste.
  7. Serve, topped with extra Parmesan and chilli flakes.
