Looking for a cozy, winter dinner that’s easy to make and full of flavour? Creamy white beans with greens and garlic are the perfect one-pan dish for busy weeknights or casual weekend meals.
Packed with protein-rich beans, leafy greens, and aromatic herbs, it’s comforting, nourishing, and ready in about 30 minutes!

Ingredients
1/4 cup olive oil
1 small yellow onion, diced
2 tsp fresh rosemary, minced
1/4 tsp chilli flakes
5 garlic cloves, minced
350g fresh kale or spinach, stems removed & roughly chopped
2x 420g cans cannellini, butter or white beans, rinsed
500 ml vegetable or chicken stock
1 tbsp lemon juice
Salt & pepper
4 tbsp grated Parmesan or Pecorino, plus more to serve
Method
- Using a cast iron pot or heavy-based pan (fry, sauce - any is good), heat the olive oil on medium heat.
- Once warmed, add the onion and rosemary. Cook, stirring occasionally, for 6 minutes, or until softened. Add the garlic and chilli flakes and cook for 1 minute, or until fragrant.
- Stir in the greens by the handful, letting them wilt before adding more.
- Add the beans, stock, and a pinch of black pepper. Stir well.
- Bring to a boil, then reduce heat and simmer for 6–8 minutes. Mash some beans with the back of a wooden spoon to help thicken the broth.
- Remove from heat. Stir in lemon juice and Parmesan. Add salt and more pepper to taste.
- Serve, topped with extra Parmesan and chilli flakes.
