Our Roasted Elephant Garlic Spread is perfect for spreadng on crusty, fresh bread or crackers, adding some depth and flavour to mashed potatoes or pasta dishes, or even swirling into soups and risottos!

Ingredients:
1–2 heads of elephant garlic
1–2 tbsp olive oil
Pinch of salt
Optional: a few sprigs of thyme or rosemary*
Method:
- Preheat oven to 180°C (350°F).
- Prep the garlic by slicing the top off the garlic heads - just enough to expose the cloves.
- Place them on a piece of foil or in a small oven-safe dish.
Season the garlic. Drizzle with olive oil and sprinkle with a little salt. * Add herbs on top if using. - Wrap the garlic in foil or cover the dish.
- Roast for about 40–50 minutes, or until cloves are soft and golden.
- Let the garlic cool slightly, then squeeze the cloves out like soft butter.
- Use immediately as a spread, or store in the fridge for up to a week.
