We've taken a summer night fave and upgraded it with some delish seasonal garlic.

Seasonal garlic and tomatoes with some thyme and cheddar come together to make an incredible light summery grilled cheese dinner.

Ingredients

250g Fresh Tomatoes (like a punnet of cherry tomatoes)
3 cloves of fresh garlic (skin off)
2 Sprigs of fresh thyme
Extra Virgin Olive Oil
Butter (as you like)
Sharp Cheddar
Good bread(dealer's choice)

Method

  1. Pre-heat the oven to ≈220C.
  2. Roughly chop any larger tomatoes, and put them all in a small roasting dish.
  3. Using the side of a knife, lightly crush the cloves of garlic and add to the tomatoes.
  4. Add the thyme to the roasting dish and drizzle olive oil over it all, tossing to make sure it's all coated.
  5. Roast for 25-30 minutes.
  6. Carefully mash the garlic into the tomatoes.
  7. Set aside to cool slightly, removing the thyme sprigs.

We're going to assume you know how you like to make a toastie (pan, press, jaffle... your call). So, use that bread, butter, cheese and tomato mix to assemble and toast up that sandwich.
